The whisky, a $62,000 bottle of limited edition Johnnie Walker Masters of Flavour, was allegedly taken from Fidels The Cellar in Southbank, Melbourne on May 22 at 5.20pm.
Police said the man entered the liquor store and hairdresser salon in the Crown Casino complex and engaged a staff member in a conversation about a number of bottles.
When she turned her back for a moment police said the man took the 48-year-old bottle from the shelf, shoved it into his shorts and left the store.
The spirit is exceptionally rare with only 288 bottles of the whisky released worldwide, Johnnie Walker's parent company Diageo said.
CCTV footage has been released of a man that police believe may be able to help with the investigation.
